Did you hate eating Brussels sprouts when you were growing up? I sure did. Well, you had a reason. Believe it or not, the Brussels sprouts we ate in the '90s and earlier were more BITTER than the ones we eat today.
It turns out that in the '90s, some scientists in the Netherlands finally figured out what chemical compounds made Brussels sprouts SO bitter.
So they were able to cross-pollenate some seeds without those compounds to grow ones that tasted better. And that's what we still eat today.
